Ingredients
1 lb chicken breast or thighs
10 oz rotini pasta
1½ cups heavy cream
1 cup freshly grated Parmesan cheese
3 tablespoons butter
4 cloves garlic, minced
1 tablespoon Cajun seasoning
1 tablespoon olive oil
Salt and pepper, to taste
1 tablespoon fresh parsley, chopped (optional)
Instructions
-
Season the chicken with Cajun seasoning, salt, and pepper.
 -
In a skillet, heat olive oil over medium-high heat. Sear the chicken for 4–6 minutes per side until golden and fully cooked. Remove and let rest.
 -
Bring a large pot of salted water to a boil. Cook rotini pasta until al dente, then drain, reserving ¼ cup of pasta water.
 -
In a separate pan, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
 -
Pour in heavy cream and bring to a gentle simmer.
 -
Gradually whisk in Parmesan cheese until the sauce is smooth and creamy.
 -
Add cooked pasta to the sauce and toss to coat. Use reserved pasta water to thin if needed.
 -
Slice the chicken and serve over the pasta. Garnish with chopped parsley if desired.

Notes
- Use freshly grated Parmesan for best results.
 - Adjust Cajun seasoning to control heat level.
 - Add sautéed spinach, mushrooms, or sun-dried tomatoes for variety.
 - Substitute shrimp or sausage for a protein twist.
 - Reheat with a splash of milk or cream to refresh the sauce.
