Ingredients

1 lb chicken breast or thighs

10 oz rotini pasta

1½ cups heavy cream

1 cup freshly grated Parmesan cheese

3 tablespoons butter

4 cloves garlic, minced

1 tablespoon Cajun seasoning

1 tablespoon olive oil

Salt and pepper, to taste

1 tablespoon fresh parsley, chopped (optional)


Instructions

  1. Season the chicken with Cajun seasoning, salt, and pepper.

  2. In a skillet, heat olive oil over medium-high heat. Sear the chicken for 4–6 minutes per side until golden and fully cooked. Remove and let rest.

  3. Bring a large pot of salted water to a boil. Cook rotini pasta until al dente, then drain, reserving ¼ cup of pasta water.

  4. In a separate pan, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.

  5. Pour in heavy cream and bring to a gentle simmer.

  6. Gradually whisk in Parmesan cheese until the sauce is smooth and creamy.

  7. Add cooked pasta to the sauce and toss to coat. Use reserved pasta water to thin if needed.

  8. Slice the chicken and serve over the pasta. Garnish with chopped parsley if desired.
