Ingredients
For the Tomato Mixture:
2 pounds ripe tomatoes, diced (recommend vine-ripened or locally grown for best flavor)
2–3 cloves garlic, minced
1/2 ounce fresh basil, chopped
Salt + pepper, to taste
5 tablespoons olive oil (divided)
For the Baguette Toasts:
1 baguette
2 teaspoons vinegar
For the Burrata:
1 ball burrata cheese (approx. 8 ounces or 227 grams)
For Garnish:
Balsamic glaze, for drizzling
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Tomato Mixture: Dice the tomatoes, mince the garlic, and chop the basil. Place the tomatoes (without excess juice and seeds) in a large mixing bowl. Season with salt and pepper, then add minced garlic and chopped basil. Stir to combine and let the mixture sit for a few minutes to draw out the flavor and remove excess liquid.
- Toast the Baguette: Slice the baguette into 1/2-inch thick pieces. Brush both sides with 3 tablespoons of olive oil. Arrange the slices on a baking sheet and toast in the oven for 5-10 minutes, flipping halfway through, until golden and crispy. Remove from the oven and transfer to a serving platter.
- Prepare the Tomato Topping: After the tomato mixture has rested, carefully drain any excess liquid. Stir in the remaining 2 tablespoons of olive oil and vinegar. Taste and adjust the seasoning with salt, if needed.
- Assemble the Bruschetta: Spoon the tomato mixture onto the toasted baguette slices. Gently tear open the burrata and scoop a dollop of the creamy center onto each toast.
- Garnish and Serve: Drizzle with balsamic glaze and sprinkle with cracked black pepper. Garnish with additional basil, if desired. Serve immediately and enjoy!
Notes
- Make it Vegan: Substitute the burrata with a plant-based cheese or drizzle with olive oil for a lighter version.
- Use Different Bread: Swap the baguette for crusty sourdough or ciabatta for a different flavor and texture.
- Add Extra Veggies: For added texture and flavor, top with chopped cucumbers, roasted peppers, or olives along with the tomatoes.
- Add Heat: For a spicy kick, add red pepper flakes to the tomato mixture or drizzle with hot honey for a sweet and spicy flavor.
