Ingredients
4 large bell peppers (any color)
2 cups cooked chicken, shredded
½ cup buffalo sauce (adjust to taste)
1 cup cream cheese, softened
1 cup shredded cheddar cheese
½ cup blue cheese crumbles (optional)
¼ cup green onions, sliced (for garnish)
Salt and pepper to taste
Olive oil for drizzling
Instructions
- Preheat the Oven:
Preheat your oven to 375°F (190°C). - Prepare the Peppers:
Cut the tops off the bell peppers and remove the seeds and membranes. Drizzle the outside of each pepper with a little olive oil, then place them in a baking dish. - Make the Filling:
In a mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, half of the shredded cheddar cheese, and blue cheese crumbles (if using). Stir until everything is well blended. Season with salt and pepper to taste. - Stuff the Peppers:
Generously stuff each bell pepper with the buffalo chicken mixture, pressing it down slightly to pack it in. - Top with Cheese:
Sprinkle the remaining cheddar cheese on top of each stuffed pepper. - Bake:
Cover the baking dish with aluminum foil and bake for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and golden. - Serve:
Remove the peppers from the oven and garnish with sliced green onions before serving.
Notes
- Type of Cherries: I like to use Bing cherries for that classic Black Forest cake flavor, but any variety of sweet, fresh cherries will work just as well.
- Storage: If you plan to store the oats for more than two days, prepare the chocolate cherry mixture as directed, but wait to stir in the chopped cherries until just before serving.
