Description

Broccoli and Cheese Stuffed Potatoes are a warm, cheesy comfort food favorite featuring fluffy baked potatoes filled with creamy mashed potato, cheddar cheese, and tender broccoli. Ideal as a hearty side or a satisfying vegetarian main, they’re easy to prepare and always crowd-pleasing.


Ingredients

4 large russet potatoes

2 cups fresh broccoli florets

1 cup shredded sharp cheddar cheese

4 tablespoons butter

½ cup milk or cream

Salt and pepper, to taste

1 teaspoon garlic powder


Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes, prick with a fork, and bake directly on the oven rack for 45–60 minutes until tender.

  2. Steam broccoli for 3–4 minutes until bright green and tender. Chop into small pieces.

  3. Let baked potatoes cool slightly, then slice open and scoop out the insides, leaving a thin shell.

  4. Mash potato flesh with butter, milk, garlic powder, salt, pepper, and half the cheese until creamy.

  5. Stir in chopped broccoli and adjust seasoning.

  6. Spoon mixture back into potato skins and top with remaining cheese.

  7. Reduce oven to 375°F (190°C) and bake stuffed potatoes for 15–20 minutes until golden and bubbly.

  8. Serve warm as a main or side dish.

Notes

  • Add more veg: Try spinach, mushrooms, or peppers.

  • Lighten it up: Use Greek yogurt instead of cream.

  • Top with sour cream, chives, or hot sauce for extra flavor.
