Ingredients
4 large russet potatoes
2 cups fresh broccoli florets
1 cup shredded sharp cheddar cheese
4 tablespoons butter
½ cup milk or cream
Salt and pepper, to taste
1 teaspoon garlic powder
Instructions

Preheat oven to 400°F (200°C). Scrub potatoes, prick with a fork, and bake directly on the oven rack for 45–60 minutes until tender.

Steam broccoli for 3–4 minutes until bright green and tender. Chop into small pieces.

Let baked potatoes cool slightly, then slice open and scoop out the insides, leaving a thin shell.

Mash potato flesh with butter, milk, garlic powder, salt, pepper, and half the cheese until creamy.

Stir in chopped broccoli and adjust seasoning.

Spoon mixture back into potato skins and top with remaining cheese.

Reduce oven to 375°F (190°C) and bake stuffed potatoes for 15–20 minutes until golden and bubbly.
