Ingredients

For the Sandwich:

4 slices sourdough bread

2 tablespoons soft butter, for spreading

4 tablespoons fig butter or jam

5 ounces brie cheese, thinly sliced

1 large Granny Smith apple, thinly sliced

½ cup baby arugula

For the Caramelized Onion:

1 tablespoon olive oil

¼ red onion, thinly sliced


Instructions

  1. Caramelize the onion: Heat olive oil in a small skillet over medium heat. Add red onion slices and cook, stirring occasionally, until soft and golden (about 5 minutes). Remove from heat and set aside.

  2. Prepare the sandwich: Butter the outside of each bread slice. Spread fig butter or jam on the inside of each slice.

  3. Layer ingredients: On one slice of bread (inside up), layer brie, apple slices, caramelized onions, and arugula. Top with the second slice of bread, butter side out.

  4. Cook the sandwich: Heat a nonstick skillet or griddle over medium-high heat. Place sandwiches butter side down and cook 2–3 minutes per side until bread is golden and cheese is melted.
