Description

Description:
Shake up your morning routine with this simple and delicious Blueberry Breakfast Quesadilla! With just three ingredients, it’s quick to make, and the combination of creamy cinnamon cream cheese, juicy blueberries, and crispy flatbread will make your taste buds dance. Perfect for a busy morning or when you’re craving something a little different for breakfast!

Ingredients

1 large light tortilla or Flatout wrap

2 wedges of The Laughing Cow Cream Cheese Spread (Cinnamon Cream)

½ cup frozen blueberries

Instructions

  1. Heat the Skillet:
Heat a nonstick skillet over medium-high heat.
  2. Prepare the Quesadilla:
While the skillet warms up, smear the cinnamon cream cheese on half of the tortilla and top it with an even layer of frozen blueberries.
  3. Grill the Quesadilla:
Spray the skillet with nonstick cooking spray. Fold the tortilla in half and place it in the skillet. Grill the quesadilla for about 2 minutes on each side, or until the tortilla crisps up and the blueberries have defrosted and released their juices.
  4. Serve:
Remove the quesadilla from the skillet, cut into wedges, and enjoy!

Notes

  • Add a little sweetness: Drizzle a small amount of honey or maple syrup over the top for an extra burst of sweetness.

  • Other fruits: Swap blueberries for raspberries, blackberries, or even strawberries for a different flavor.

  • Crunchy texture: Sprinkle some chopped nuts like almonds or walnuts before folding the quesadilla for extra crunch.

  • Spice it up: Add a dash of cinnamon or nutmeg to the cream cheese for an extra flavor kick.
