Ingredients

1 pound ground beef

1 can refried beans (15 oz)

1 packet taco seasoning (or homemade)

6 large flour tortillas

2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)

2 cups enchilada sauce (store-bought or homemade)

Sour cream, for topping

Chopped onions, for garnish

Fresh cilantro, for garnish


Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.

  3. Stir in taco seasoning and refried beans; cook until heated through.

  4. Warm tortillas to make them pliable. Fill each with the beef and bean mixture, then roll into burritos.

  5. Place burritos seam-side down in a baking dish.

  6. Pour enchilada sauce over the burritos and sprinkle generously with shredded cheese.

  7. Bake uncovered for 20 minutes, until the cheese is melted and bubbly.

  8. Garnish with sour cream, onions, and cilantro before serving.
