Description
Beef and Bean Smothered Burritos are hearty, cheesy, and saucy Tex-Mex comfort food. Flour tortillas are stuffed with seasoned beef and creamy refried beans, rolled, then baked under a layer of enchilada sauce and melted cheese. Finished with sour cream, onions, and cilantro, they’re the perfect family dinner or casual gathering dish.
Ingredients
1 pound ground beef
1 can refried beans (15 oz)
1 packet taco seasoning (or homemade)
6 large flour tortillas
2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
2 cups enchilada sauce (store-bought or homemade)
Sour cream, for topping
Chopped onions, for garnish
Fresh cilantro, for garnish
Instructions
-
Preheat oven to 350°F (175°C).
 -
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
 -
Stir in taco seasoning and refried beans; cook until heated through.
 -
Warm tortillas to make them pliable. Fill each with the beef and bean mixture, then roll into burritos.
 -
Place burritos seam-side down in a baking dish.
 -
Pour enchilada sauce over the burritos and sprinkle generously with shredded cheese.
 -
Bake uncovered for 20 minutes, until the cheese is melted and bubbly.
 -
Garnish with sour cream, onions, and cilantro before serving.

Notes
- Add jalapeños or hot sauce for extra spice.
 - Use ground turkey, chicken, or black beans instead of beef.
 - Corn tortillas can be substituted for a gluten-free version (warm well to avoid cracking).
 - Add sautéed peppers, mushrooms, or zucchini to boost veggie content.
 - For freezer-friendly burritos, assemble and wrap before baking. Freeze, then bake from frozen with extra time.
