Ingredients
Salmon Bites

 - 1 tablespoon extra virgin olive oil
 - 2 tablespoons cornstarch
 - 1 tablespoon Cajun seasoning or Creole seasoning
 
Bang Bang Sauce
- ¾ cup mayonnaise
 - ⅓ cup Thai sweet chili sauce
 - 1 tablespoon sriracha
 - 1 tablespoon lime juice
 
Serving & Garnish
- cooked rice Jasmine or Basmati
 - sliced green onions
 - red chili pepper like a Fresno chili, thinly sliced
 - sesame seeds
 
Instructions
- Preheat Oven: Preheat your oven to 425°F and line a baking sheet with parchment paper.
 - Prepare Salmon Bites: Pat dry salmon fillet, cut into cubes, coat with olive oil, cornstarch, and Cajun seasoning. Arrange on the baking sheet.
 - Bake Salmon: Bake for 10-12 minutes, then broil for 5 minutes until golden and cooked through.
 - Make Bang Bang Sauce: Mix mayonnaise, sweet chili sauce, sriracha, and lime juice in a bowl.
 - Coat Salmon: Toss cooked salmon bites with Bang Bang sauce.
