Ingredients

2 large onions, thinly sliced

1 tbsp olive oil, plus extra as needed

1 tbsp butter

1 tsp kosher salt, divided

1 baguette

12 oz soft goat cheese

4 oz cream cheese, softened

Honey, as needed

1 tbsp chopped fresh thyme


Instructions

  1. Heat olive oil and butter in a skillet. Add onions and 1/2 tsp salt. Cook 3–4 minutes, then reduce to medium-low and caramelize for 25–35 minutes, stirring regularly. Remove from heat.

  2. Preheat broiler to high. Slice baguette into thin rounds, place on baking sheet, and broil 3–5 minutes per side until golden. Set aside.

  3. Blend goat cheese, cream cheese, and 1/2 tsp salt in a food processor until smooth.

  4. Preheat oven to 400°F. Lightly grease a gratin dish. Layer cheese mixture and caramelized onions with honey and thyme, repeating three times.

  5. Bake for 20–25 minutes until bubbly and golden on top.

  6. Serve warm with crostini, crackers, or vegetables.

Notes

  • Add toasted walnuts or pecans before baking for crunch.
