Ingredients
2 large onions, thinly sliced
1 tbsp olive oil, plus extra as needed
1 tbsp butter
1 tsp kosher salt, divided
1 baguette
12 oz soft goat cheese
4 oz cream cheese, softened
Honey, as needed
1 tbsp chopped fresh thyme
Instructions
-
Heat olive oil and butter in a skillet. Add onions and 1/2 tsp salt. Cook 3–4 minutes, then reduce to medium-low and caramelize for 25–35 minutes, stirring regularly. Remove from heat.
-
Preheat broiler to high. Slice baguette into thin rounds, place on baking sheet, and broil 3–5 minutes per side until golden. Set aside.
-
Blend goat cheese, cream cheese, and 1/2 tsp salt in a food processor until smooth.
-
Preheat oven to 400°F. Lightly grease a gratin dish. Layer cheese mixture and caramelized onions with honey and thyme, repeating three times.
-
Bake for 20–25 minutes until bubbly and golden on top.
-
Serve warm with crostini, crackers, or vegetables.
Notes
- Add toasted walnuts or pecans before baking for crunch.
- Use rosemary, oregano, or basil instead of thyme.
- For extra sweetness, layer in dried cranberries, figs, or pear slices.
- For spice, add red pepper flakes or drizzle with hot honey.
- Serve with gluten-free crackers or veggie sticks for a GF option.
