Description

This Baked Cabbage with Garlic and Parmesan transforms simple cabbage into a savory, crispy side dish perfect for weeknight dinners or holiday meals. Roasting enhances the cabbage’s natural sweetness, while garlic and Parmesan create rich, nutty flavor. Easy, make-ahead friendly, and vegetarian, this baked cabbage recipe is a delicious way to elevate your vegetables.

Ingredients

Cooking spray

½ small to medium green cabbage, cut into 4 wedges

4 tbsp unsalted butter, melted

Salt and freshly ground black pepper, to taste

4 cloves garlic, minced

½ cup freshly grated Parmesan cheese

Chopped fresh parsley (optional, for garnish)

Instructions

  1. Step 1: Preheat and Prepare
Preheat oven to 375°F (190°C). Spray a 13 x 9-inch baking dish with cooking spray.
  2. Step 2: Make Garlic Butter
Combine melted butter, minced garlic, salt, and black pepper in a small bowl.
  3. Step 3: Prepare Cabbage Wedges
Arrange cabbage wedges in the baking dish. Brush half the garlic butter over the wedges and press half of the Parmesan cheese on top.
  4. Step 4: Flip and Repeat
Carefully flip each wedge, keeping as much cheese in place as possible. Brush with remaining garlic butter and press on the remaining Parmesan.
  5. Step 5: Bake
Bake 40–45 minutes, until cheese melts and edges are lightly browned and crispy. Tent with foil if browning too quickly.
  6. Step 6: Serve
Garnish with chopped parsley if desired and serve hot.

Notes

  • Substitutions: Try Savoy or red cabbage, or swap Parmesan for Asiago or Romano.
  • Different Presentation: Cut cabbage into “steaks” instead of wedges.
  • Core Tip: Keeping the core helps wedges stay intact while baking.
  • Make-Ahead: Prepare wedges and garlic butter ahead, then bake when ready.
