Ingredients

For the Apple Cake:

  • 1 teaspoon baking soda

  • ½ teaspoon freshly grated nutmeg

  • 3 pounds Granny Smith apples, peeled and diced into ½ inch pieces

For the Caramel Glaze:

  • 4 tablespoons unsalted butter
  • ¼ cup granulated sugar
  • ¼ cup light brown sugar
  • Pinch salt
  • ½ cup heavy cream

Instructions

  1. For the Apple Cake: Preheat the oven to 325°F. Butter a 9-by-13-inch baking dish. In a large bowl, beat the sugars and oil until well blended. Add the eggs and beat until combined. In another bowl, combine the flour, baking soda, cinnamon, cardamom, nutmeg, and salt; gradually add to the sugar and eggs, mixing until well blended. Stir in the vanilla, then fold in the apples and pecans. Transfer the batter to the prepared pan. Bake for 55-65 minutes or until a toothpick comes out clean. Let cool.
  2. For the Caramel Glaze: Melt butter in a saucepan; add sugars and salt. Whisk until blended and cook over medium-low heat for 2 minutes. Pour in the cream, whisk, and boil for 2 minutes. Remove from heat; the sauce will thicken.
  3. Assemble the Cake: Poke holes in the cake and pour warm caramel glaze over it. Serve warm or at room temperature.
