Ingredients
Wet Ingredients
- 3 large eggs
 - ½ cup pure maple syrup
 - 2 tsp pure vanilla extract

Dry Ingredients
- 2 cups almond flour
 - ½ cup tapioca flour
 - 2 tsp pumpkin pie spice or ground cinnamon
 - 1 tsp baking powder
 - 1 tsp sea salt

Other
- 1 ½ cups fresh apples, finely chopped

Instructions
- Preheat and prepare pan: Preheat your oven to 350°F (175°C) and line a 9 x 5 inch loaf pan with parchment paper to prevent sticking and ensure easy removal.
 - Mix wet ingredients: In a large bowl, whisk together 3 large eggs, ½ cup pure maple syrup, and 2 teaspoons pure vanilla extract until well combined and smooth.
 - Combine dry ingredients: In a separate bowl, stir together 2 cups almond flour, ½ cup tapioca flour, 2 teaspoons pumpkin pie spice (or ground cinnamon), 1 teaspoon baking powder, and 1 teaspoon sea salt to distribute the leavening and spices evenly.
 - Incorporate dry into wet: Gradually pour the dry ingredient mixture into the bowl of wet ingredients and mix thoroughly until the batter is uniform with no flour pockets.
 - Add apples: Fold in 1 ½ cups of finely chopped fresh apples gently to incorporate without overmixing, distributing them evenly throughout the batter.
 - Fill loaf pan and bake: Pour the batter into the prepared loaf pan, smoothing the top into an even layer. Cover the pan loosely with aluminum foil to prevent over-browning and bake on the center rack in the preheated oven for 60 to 70 minutes.
 - Check doneness: Using a digital thermometer, insert it into the center of the bread; it should reach 190°F or higher to confirm the bread is fully baked. Alternatively, a toothpick inserted should come out clean.
 - Cool and serve: Remove the bread from the oven and allow it to cool completely at room temperature. Slice and serve warm or at room temperature. For an enhanced snack, warm a slice and spread with butter or almond butter.

Notes
- Make sure to chop apples finely to ensure even distribution and moist texture inside the bread.
 - If you prefer a sweeter bread, consider adding a tablespoon more maple syrup, but be mindful of baking times as extra moisture may require slight adjustments.
 - Using parchment paper helps prevent the bread from sticking and makes cleanup easier.
 - Storing leftovers in an airtight container at room temperature will keep the bread fresh for up to 3 days, or refrigerate for up to a week.
 - This bread is naturally gluten-free and can be made dairy-free by using dairy-free spreads.
