Ingredients

Zucchini Mixture

  • 1 medium zucchini
  • ½ tsp salt

  • 1 cup corn, from 1 cob or canned
  • ½ cup feta cheese
  • 1 egg


Instructions

  1. Dry Zucchini: Use a box grater to shred 1 medium zucchini using the largest hole setting. Transfer the shredded zucchini to a mesh sieve, sprinkle with ½ tsp salt, and let it drain while you prepare the other ingredients. Then press the zucchini down with a spoon to squeeze out excess moisture. Transfer the zucchini to paper towels and pat dry thoroughly. You should be left with about 1 cup of shredded zucchini per zucchini.
  2. Stir Ingredients: In a bowl, combine the dried shredded zucchini with ½ cup flour, ½ tsp black pepper, and ½ tsp baking powder. Mix until all the zucchini strands are evenly coated. Then stir in 1 cup of corn, ½ cup crumbled feta cheese, and 1 egg until incorporated.
  3. Shape Fritters: Using a ¼ cup scoop, drop portions of the mixture into your air fryer basket. You may need to do this in batches, as a typical basket fits about 5 fritters. Lightly spray the tops with oil and press down gently with a spatula to form thick, flat pucks.
  4. Cook: Air fry the fritters at 375°F (190°C) for 10 to 12 minutes until they turn golden brown and crispy on the outside.
