These Air Fryer Strawberry Muffins are soft, fluffy, and packed with fresh strawberries. Ready in under 25 minutes with no oven required, they’re perfect for breakfast, snacks, or dessert.
Ingredients
For Buttermilk
½ cup lukewarm milk (120 ml)
½ teaspoon vinegar (2.5 ml)
Wet Ingredients
2 tablespoons melted butter (30 g)
2 tablespoons oil (30 ml)
1 egg
1 teaspoon vanilla extract (5 ml)
Additional Ingredients
½ cup sugar (100 g)
1 ¼ cups chopped strawberries, divided (190 g)
Dry Ingredients
1 ¼ cups all-purpose flour (150 g)
1 ½ teaspoons baking powder (6 g)
½ teaspoon baking soda (2 g)
⅛ teaspoon salt (pinch)
Toppings
1 tablespoon sliced almonds (8 g)
2 teaspoons sugar (8 g)
Instructions

Make the buttermilk: Mix milk and vinegar in a small bowl; let stand for 5 minutes until curdled.

Preheat the air fryer to 190°C (375°F) and line 8 muffin molds with liners.

In a large bowl, whisk together buttermilk, melted butter, oil, egg, and vanilla. Mix in sugar.

Sift flour, baking powder, baking soda, and salt into wet mixture. Gently fold until just combined; batter will be thick and slightly lumpy.

Fold in 1 cup of chopped strawberries.

Divide batter among molds. Top with remaining strawberries, almond slices, and sprinkle sugar.

Air fry at 190°C for 13–14 minutes or until a toothpick comes out clean. Avoid overcrowding; cook in batches if needed.

Cool on a wire rack before serving.
Notes
- Can use frozen strawberries if thawed and drained.
- Any neutral oil works; sunflower or canola is ideal.
- For eggless muffins, replace the egg with ¼ cup yogurt or applesauce.
