Description

These Air Fryer Blueberry Hand Pies are a perfect blend of crispy, flaky pastry and sweet blueberry filling. Ingredients

1 package (17.3 oz) puff pastry sheets (2 sheets)

2 cups fresh blueberries

1/4 cup granulated sugar

1 tbsp fresh lemon juice

1 egg (for egg wash)


Instructions

  1. Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C).
  2. Prepare the Filling: Rinse the blueberries under cold water and pat them dry. In a mixing bowl, combine the blueberries with sugar and lemon juice. Stir gently to mix and coat the blueberries evenly.
  3. Prepare the Puff Pastry: Roll out the puff pastry on a floured surface to prevent sticking. Use a round cutter (about 4 inches in diameter) to cut circles out of the pastry sheets.
  4. Assemble the Hand Pies: Place a spoonful of the blueberry filling on half of each pastry circle. Fold the other half over the filling and seal the edges by pressing with your fingers or using a fork to crimp the edges.
  5. Egg Wash: Beat the egg and brush the tops of the hand pies with the egg wash to give them a golden finish when cooked.
  6. Cook in the Air Fryer: Arrange the hand pies in a single layer in the air fryer basket. Be sure not to overcrowd them. Cook for 10-12 minutes or until the pastry is golden brown and puffed up.
  7. Serve: Allow the hand pies to cool for a few minutes before serving. Enjoy them warm!
