Ingredients

2 medium cucumbers, peeled and sliced

4 cups cold water

¼ cup fresh lime juice

2 tbsp honey (or agave nectar)

810 fresh mint leaves

¼ tsp sea salt

Ice cubes

Additional cucumber slices and mint sprigs, for garnish


Instructions

  1. Prep Cucumbers – Peel and slice cucumbers into ¼-inch rounds.
  2. Blend – Add cucumber slices and water to a high-powered blender; blend until smooth (about 60–90 seconds).
  3. Strain – Pour mixture through a fine-mesh sieve into a pitcher, pressing solids to extract liquid.
  4. Add Lime & Honey – Stir in lime juice and honey until honey dissolves. Adjust sweetness to taste.
  5. Muddle Mint & Add Salt – Lightly muddle mint leaves, add to pitcher with salt, and stir.
  6. Chill – Refrigerate for 30 minutes to let flavors develop.
  7. Serve – Pour over ice and garnish with cucumber slices and mint sprigs.
