Description

Apple Crumb Cake with Cinnamon Apple Drizzle is a delightful and comforting dessert featuring tender apples, a buttery crumb topping, and a luscious cinnamon apple drizzle. Perfect for fall gatherings or any occasion, this moist cake is a crowd-pleaser that combines sweet, spiced flavors with a satisfying crumbly texture.

Ingredients

For the Cake:

1½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon ground cinnamon

¼ teaspoon salt

¾ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup sour cream

2 medium apples, peeled, cored, and chopped into small cubes (preferably Granny Smith)

For the Crumb Topping:

1 cup all-purpose flour

1 teaspoon ground cinnamon

¼ teaspoon salt

½ cup unsalted butter, cold and cubed

½ cup brown sugar, packed

¼ cup granulated sugar

For the Cinnamon Apple Drizzle:

1 tablespoon unsalted butter

½ cup brown sugar, packed

1 teaspoon ground cinnamon

2 tablespoons milk

A pinch of salt

Instructions

  1. Prepare the Cake Batter: Preheat the oven to 350°F (175°C). Grease and flour a 9×9-inch square baking pan or line it with parchment paper. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract and sour cream until well combined. Gradually add the dry ingredients and mix just until combined. Gently fold in the chopped apples.
  2. Make the Crumb Topping: In a medium bowl, combine the flour, cinnamon, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs. Stir in the brown sugar and granulated sugar.
  3. Assemble the Cake: Pour the cake batter into the prepared pan and spread it evenly. Sprinkle the crumb topping evenly over the batter.
  4. Bake the Cake: Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan on a wire rack for about 15 minutes. Remove the cake from the pan and let it cool completely.
  5. Prepare the Cinnamon Apple Drizzle: In a small saucepan over medium heat, melt the butter. Stir in the brown sugar, cinnamon, milk, and a pinch of salt. Cook, stirring constantly, until the mixture is smooth and heated through, about 2-3 minutes. Remove from heat and let it cool slightly.
  6. Serve: Once the cake has cooled, drizzle the cinnamon apple glaze over the top. Slice and serve.

Notes

  • For a nutty crumble, add chopped walnuts or pecans to the topping.
  • For a spiced drizzle, add nutmeg or cloves to the cinnamon apple drizzle.
  • For a caramel twist, substitute brown sugar in the drizzle with caramel sauce.
